Charleston based Heron Farms began as a college research experiment and has evolved to become a hydroponic farm growing Salicornia, an annual species of sea vegetable also known as sea bean, sea pickle and glasswort. Heron Farms sea beans don the plates at restaurants around Charleston. If you want some for your own dinner plate, you can order them on the Heron Farms website. For each pound sold, Heron Farms plants one square foot of marsh in their marsh restoration efforts.
