Denver based restaurant, Root Down serves globally-influenced seasonal cuisine, with a focus on organic, natural and locally-sourced ingredients. The restaurant also features an extensive wine list, thoughtful beer offerings, and specialty cocktails. Root Down has two onsite gardens that provide seasonal vegetables for Root Down and their sister restaurants, Linger and Ophelia’s. Over 50% of their ingredients are sourced locally and their network of responsible food sourcing supports over 55 local ranchers, farmers, growers and food artisans. The restaurants are powered solely by 100% clean wind energy, cleaning products and sanitizers are biodegradable and the bathroom & kitchen paper products are made from 100% post-consumer unbleached recycled paper. They compost and recycle, diverting an average of 80% of their waste from landfills.
